Fire and Ice Jelly

 

  • 3 to 4 cups finely chopped sweet red pepper
  • 2 tsp. dried crushed chilli pepper flakes
  • 12 oz bottle ice wine or sweet dessert wine
  • 4 tbsp. lemon juice
  • 3 cups sugar
  • 1 pouch liquid fruit pectin

 

Measure red pepper, flakes, wine, and lemon juice in large heavy 5-liter saucepan. Let stand 20 min. Add sugar and mix well. Place saucepan over high heat. Bring to full rolling boil and boil hard for 1 min., stirring constantly. Remove from heat  

Immediately stir in liquid fruit pectin. Stir and skim with metal spoon for 7 min. to prevent floating peppers . Pour quickly into warm, sterilized jars. Seal while hot. Makes 7 jars.
